Southwest Roll-ups (burritos)
ingredients
- 2 T. Salsa
- 1 to 2 jalapeno peppers
- 1 garlic clove
- 2 T. chopped onion
- 1 can (16 ounces) refried beans
- 1/2 tsp. ground cumin
- 1 T. chopped fresh cilantro (optional)
- 1 c. cubed cooked chicken
- 1 c. (4 ounces) FF feta, cheddar, or almond cheddar cheese
- 10 to 12 spelt or brown rice tortillas
- FF sour cream and additional salsa (optional)

Place the first eight ingredients and 1/2 cup cheese in a food processor; blend until smooth. Spread evenly over tortillas. Roll up and place seam side down in a greased 13-in x 9-in. baking dish. Cover and bake at 350° for 20 minutesor until heated through.

Sprinkle with remaining cheese; broil until melted/brown. Serve with sour cream and salsa if desired.

Yields: 10 - 12 servings.
