Southwest Roll-ups (burritos)

ingredients

  • 2 T. Salsa
  • 1 to 2 jalapeno peppers
  • 1 garlic clove
  • 2 T. chopped onion
  • 1 can (16 ounces) refried beans
  • 1/2 tsp. ground cumin
  • 1 T. chopped fresh cilantro (optional)
  • 1 c. cubed cooked chicken
  • 1 c. (4 ounces) FF feta, cheddar, or almond cheddar cheese
  • 10 to 12 spelt or brown rice tortillas
  • FF sour cream and additional salsa (optional)

    Place the first eight ingredients and 1/2 cup cheese in a food processor; blend until smooth. Spread evenly over tortillas. Roll up and place seam side down in a greased 13-in x 9-in. baking dish. Cover and bake at 350° for 20 minutesor until heated through.

    Sprinkle with remaining cheese; broil until melted/brown. Serve with sour cream and salsa if desired.

    Yields: 10 - 12 servings.
