Thai Pesto Shrimp
ingredients
- 1 1/2 lb large raw shrimp 16-20
- PESTO:
- 1 c loosely packed fresh cilantro leaves
- 3 TBL fresh lime juice
- 2 TBL unsalted dry roasted peanuts
- 2 Tb minced ginger
- 2 cloves garlic
- 3/4 tsp salt
- 2 tsp honey
- 1/2 tsp dried crushed red pepper flakes
- 1/4 c olive oil, DIVIDED
- 1 C coconut milk
- 1/2 tsp salt
- 1 1/2 C uncooked Jasmine Rice
- 1 tsp lime zest
- 1 1/2 tablespoon fresh lime juice
- Bring coconut milk, salt and 2 cups water to a boil over med heat. Stir in rice; cover reduce heat to low and simmer, stir occasionally cook 20-25 minutes or until all liquid is absorbed and rice is tender. Stir in lime zest and juice.

2. in food processor add cilantro and next 8 ingredients add 3 Tablespoon olive oil(making PESTO)

3. Sauté shrimp in 1 TBS olive oil until pink serve over Coconut lime Rice

4. Top with Cilantro pesto
