ingredients

  • 1T olive oil
  • 3 cloves garlic, chopped
  • 1 medium to large onion chopped
  • 1lb ground lamb
  • 1c stock of choice
  • .25c dry quinoa
  • 1c dry lentils
  • 1 whole roasted red pepper, chopped
  • .5 small jalapeno, chopped, seeds removed
  • .5t cinnamon
  • 1T cumin
  • dash ground clove
  • 1T chili powder
  • 1t crushed red pepper
  • squeeze of lime
  • salt
  • freshly ground pepper
  • sprinkle xylitol or
  • 1 drop stevia extract
  • 1T cilantro
  • pinch of basil
  • water
  • yogurt and cheese for garnish

directions

  • 1

    heat olive oil on medium heat

  • 2

    add garlic and onion and a little salt

  • 3

    sautee until onions are translucent

  • 4

    add lamb and brown

  • 5

    add stock

  • 6

    add quinoa, lentils and peppers

  • 7

    add enough water to cover plus .5-1 inch

  • 8

    cover and simmer on low heat until quinoa and lentils are tender

  • 9

    add water or stock as needed

  • 10

    stir in spices, lime and sweetener

  • 11

    add herbs

  • 12

    serve with yogurt and cheese
