Sesame Noodles

ingredients

  • 10 oz. Japanese curly noodles (Chuka Soba) OR vermicelli
  • 6 scallions, thinly sliced
  • 3 Tb. dark sesame oil
  • Blend sauce together in a food processor:
  • 1 clove garlic
  • 2 Tb. fresh grated ginger
  • 1/4 cup chicken broth
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup dark sesame oil
  • 2 tsp. sugar
  • 3 Tb. fresh lime juice or rice vinegar
  • 1-2 tsp. hot chili oil or paste

directions

    Cook noodles as directed on package, rinse. Toss noodles with 3 Tb. sesame oil and scallions. Pour sauce over noodles and toss. Optional: garnish with 3 Tb. chopped cilantro and 1 Tb. sesame seeds.

    Serve cold or at room temp.

Easily doubled. Excellent accompaniement to Asian salmon burgers.
