Sesame Noodles
ingredients
- 10 oz. Japanese curly noodles (Chuka Soba) OR vermicelli
- 6 scallions, thinly sliced
- 3 Tb. dark sesame oil
- Blend sauce together in a food processor:
- 1 clove garlic
- 2 Tb. fresh grated ginger
- 1/4 cup chicken broth
- 1/4 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup dark sesame oil
- 2 tsp. sugar
- 3 Tb. fresh lime juice or rice vinegar
- 1-2 tsp. hot chili oil or paste

Cook noodles as directed on package, rinse. Toss noodles with 3 Tb. sesame oil and scallions. Pour sauce over noodles and toss. Optional: garnish with 3 Tb. chopped cilantro and 1 Tb. sesame seeds.

Serve cold or at room temp.

Easily doubled. Excellent accompaniement to Asian salmon burgers.
