Red Beans and Rice
ingredients
- 1 lb red beans
- 10 cups water
- 1 bunch green onions
- 1/2 red onion, chopped
- 2 stalks celery
- 2 cloves garlic
- 1 t sage
- 1 lb beef or andouille sausage
- 1 c diced ham
- 4 - 5 bay leaves
- Cooked rice

Chop all the vegetables.

Cover beans with water, boil until tender (about 2 hours), stirring occasionally.

During the last hour add all other ingredients and bay leaves. Boil slowly and stir often.

Serve in crock type bowls and top with cooked rice.
