Smoked Turkey Wraps
ingredients
- 6 sun-dried tomato-basil or spinach herb 10-inch tortilla wraps
- one 7-ounce container roasted red pepper or other flavor hummus
- 3/4 pound very thinly sliced smoked, cracked-pepper, Salsalito, or other spicy turkey
- Boston or Bibb lettuce leaves, washed and dried
- 1/4 red onion, slivered
- 2 tomatoes, thinly sliced
- 12 slices bacon, cooked crisp
- salt and pepper

Heat each wrap for about 10 seconds in a hot skillet or in the microwave.

Spread each wrap with hummus, spreading to within 1 inch of the edge all around. In the center of each wrap, place some smoked turkey, a lettuce leaf, 2 or 3 onion slivers, and 2 tomato slices. Top with 2 slices of bacon and sprinkle with salt and pepper. Fold in each side of the wrap, then roll tightly from the bottom. Wrap each tightly in plastic wrap.

To serve, cut each wrap into halves or thirds.
notes
Could also do roast beef with horseradish/sour cream spread or vegetarian wrap with artichoke hearts, roasted red peppers and feta cheese.
