Ginger-Wasabi Crockpot Beef
An Asian-inspired beef dish that’s rich, flavorful, and satisfying.
ingredients
- Top round or flank steak (about 2 lbs)
- 1 large yellow onion, sliced thin
- 1 cup of sweet BBQ sauce (nothing really smoky-tasting; you can substitute Hoisin Sauce)
- 3-4 tbsp Rice wine vinegar
- 1/2 cup Sake (I used plum sake)
- 1/4 cup low sodium teriyaki sauce
- 2 tbps. chopped ginger
- 2 tbsps. chopped garlic
- 2 tbsps. wasabi paste
- Splash of dark sesame oil

Add onions and then beef to the crockpot. Mix together the rest of the ingredients and pour over the beef. Cook on high 4 hrs or low 6 hrs.

Shred meat with two forks, then return to sauce. Add 2 tbsps of quick cooking tapioca, and let go another 20-30 minutes, so sauce thickens.
notes
The flank steak shreds really easily; the top round takes more work. Alternately, you can slice the top round and spare yourself the torture of shredding it.
