Crockpot Posole Verde
A quick posole that’s tasty enough for guests.
ingredients
- 1 lb pork tenderloin, cubed
- 1 pkg. chipotle chicken sausage, sliced
- 1 lg. red onion, quartered and sliced
- 3 cloves garlic, minced
- 2 cans hominy, drained
- 1 can kidney beans, drained
- 1 lg. can whole tomatillos, drained
- 3 sm. Cans diced green chilis, drained
- 1 14-oz. can chicken broth
- 1 tbsp. mild chili powder
- 2 tbsp Cumin
- 1 tsp. oregano
- Salt & pepper to taste
directions
Layer onions, garlic, meats in crockpot. Then top with tomatillos, chilis, broth and spices. Break up tomatillos as you mix. Cook on low 8-10 hours, or on high 4-6 hours. Top with chopped fresh cilantro and a wedge of lime.
notes
This makes around 6-8 dinner servings, plus a lunch or two. You’ll need to add more broth when reheating, so it stays soupy. Also freezes really well.
