Blender Banana Bread
Easy, quick and a great way to use up old bananas
ingredients
- 2 eggs
- 1/3 cup soft shortening
- 2 ripe bananas, peeled and sliced
- 2/3 cup of sugar
- 1 3/4 cups sifted unbleached flour
- 3/4 teaspoon baking soda
- 1 1/4 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans

Preheat oven to 350 degrees

Grease 8 x 4 inch loaf pan

Mix eggs, shortening, bananas, and sugar in blender container. Blend for 30 seconds or until smooth. Sift dry ingredients into a large mixing bowl. Add blender ingredients and stir until just combined. Pour into prepared loaf pan.

Bake for 45 minutes or until lightly browned. Cool on rack.
