Foccacia Finger Sandwiches
ingredients
- 2 red or yellow Peppers
- 3 Tbs olive oil
- 1 1/2 Tbs, balsamic vinegar
- 1 glove garlic, minced
- 1/4 tsp pepper
- 1/4 tsp salt
- 4 oz goat cheese
- 1 1/2-Tbs chopped fresh basil
- Foccacia bread
- 1 cup shredded romaine lettuce

Prepare broiler. Quarter bell peppers lengthwise: discard stems and seeds. Flatten with palm of hand. Place skin side up on foil-lined baking sheet. Broil 3-4" from heat until skins is evenly blackened, 8-12 minutes. Wrap peppers in foil from pan; let stand 15 minutes.

Meanwhile, in a small bowl, mix oil, vinegar, garlic, salt and pepper. Peal of and discard skin from peppers. Cut int uniform pieces; arrange in shallow dish. Pour dressing over peppers, cover;chill at least 4 hrs up to 24 hrs.

In a small bowel, combine goat cheese and basil; mix well. Drain peppers; add marinade from peppers to cheese mixture; mix well.

Slice Foccacia spread with cheese , layer with peppers, cut into small sandwiches.

We made this for a shower. Everyone raved about it. We also made our own Foccacia bread.
