Tony Lukes Italian Roast Pork Sandwich
South Philly favorite. Start early because it has to cook slowly until it falls it apart
ingredients
- 1 (2 1/2lb) pork shoulder
- 3 tbls garlic (chopped)
- 2 1/2 tbls fresh rosemary (chopped)
- 3 tbls fresh parsley (chopped)
- 1 Tbls salt
- 1/2 tesapoon fresh cracked black peper
- 1 tbl olive oil

Broccoli Rabe

1 lb broccoli rabe

3 quarts water

1/4 C oil oil

2-3 garlic cloves, chopped

1/4 to 1/2 tsp read pepper flakes

Crusty Italian rolls

1/2 lb sharp provolone cheese

Turn crock pot on high setting

If roast comes in netting remove but keep intack you’ss be using later

Mix next 6 ingredients in bowl

Spread the port roast out on clean surface
- 15
If there are any large thick sections of meat score with a knife.

Rub 3/4 of the mixture over the meat.

Roll the roast back up and place back in netting.

Place the roast in the crock pot and cook at high for 20 minutes

Turn down to low and cook at least 3 hours longer or untill the port is falling apart.

Remove pork from truss or netting shred into large chuncks, remove large pieces of fat.

Return to juices in crock pot

For the Rabe Wash throughly and cut about 1/2 inch off bottom

Cut florets off top set aside

Bring 3 qts salted water to boil

Add broccoli rabe leaves and stem and cook about 8 minutes then add the florets and cook until tender 5-7 minutes.

Reserve 1/4 - 1/2 Cup of the cooking liquid.

In deep frying pan begin heat olive oil,red pepper flakes and garlic together over medium heat.

Once the garlic begins to saute begin to time about 2 minutes --drain

Sauet the broccoli rabe about 3-5 minutes longer and then add the cooking liquid to pot.

Assemble on toasted roll

Add prove to roll ,hot meat, cheese melts top with broccoli rabe
