PEACH KUCHEN
ingredients
- 2 cups sifted flour
- 2 tbspns sugar
- 1/4 tspn baking powder
- 1/2 tspn salt
- 1/2 cup butter
- 12 canned peach halves well-drained (2 large cans) or equal amount fresh peaches
- 1 cup light brown sugar
- 1 tspn cinnamon
- 2 egg yolks
- 1 cup heavy cream + extra for whipping

Preheat oven to 400.

Use 9" spring form pan.

In large bowl, mix flour, sugar, baking powder, salt.

With 2 knives or a blender, cut inthe butter to the flour mixture until consistency of cornmeal. Sprinkle mixture over bottoms & sides of a greased 9" spring form pan.

Place peaches cut side down over dough.

Combine brown sugar & cinnamon - sprinkle over peach halves. Bake 15 minutes.

Mix egg yolks with cream, pour over baked peaches , continue to bake 30 min longer or till brown and topping appears set.

Cool & serve with whipped cream or ice cream.
