Twice Everything Potatoes

ingredients

  • 4 slices bacon (diced)
  • 4 Idaho potatoes
  • 1/4 cup butter
  • 1/4 cup whipping cream
  • 1 carton sour cream (8 oz)
  • 3/4 cup cheddar cheese (shred)
  • 1/2 cup green onion (chopped)
  • 3 tablespoon Parmesan cheese
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon pepper

    Cook bacon and drain excess fat. Set aside

  • 2

    Scrub potatoes. Prick with fork. Microwave for 10 minutes. Cut potatoes in half. Remove potato pulp. Combine potato pulp, butter, whipping cream in large bowl. Mash until together. Stir in sour cream, cheeses, onion, garlic salt and pepper. Spoon mixture into potato shells. Place on baking sheet. Bake at 400` for 10 minutes. Sprinkle with bacon.
