Chickpea and Zucchini Salad
ingredients
- 2 tbsp. fresh lemon juice
- 1 tbs.fresh lemon zest (about 1/2 lemon rind)
- 1/4 c. extra virgin olive oil
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 c. chickpeas (garbanzo beans)
- 2 medium green zucchinis, diced into 1/2" cubes
- 1/2 c. frozen corn, thawed
- 1 c. diced fresh tomato
- 1/2 c. small red onion, sliced thin
- 5 romaine lettuce leafs, chopped
- 1 oz. parmesano reggiano cheese, shaved or shredded

For vinaigrette, whisk to combine lemon juice, zest, olive oil, salt, and pepper.

For salad, combine, chickpeas, zucchini, corn, tomato, and lettuce.

Dress with vinaigrette. Top with parmesan cheese.
