Chickpea and Zucchini Salad

ingredients

  • 2 tbsp. fresh lemon juice
  • 1 tbs.fresh lemon zest (about 1/2 lemon rind)
  • 1/4 c. extra virgin olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 c. chickpeas (garbanzo beans)
  • 2 medium green zucchinis, diced into 1/2" cubes
  • 1/2 c. frozen corn, thawed
  • 1 c. diced fresh tomato
  • 1/2 c. small red onion, sliced thin
  • 5 romaine lettuce leafs, chopped
  • 1 oz. parmesano reggiano cheese, shaved or shredded

directions

    For vinaigrette, whisk to combine lemon juice, zest, olive oil, salt, and pepper.

    For salad, combine, chickpeas, zucchini, corn, tomato, and lettuce.

  • 3

    Dress with vinaigrette. Top with parmesan cheese.
