'Wild' Croquettes
Inspired by ’Potato Latkes’...
ingredients
- 4 large desiree potatoes
- 2 eggs, free range
- 1-2 garlic cloves
- 1/2 cup Panko or breadcrumbs
- 1/2 to 3/4 cup olive oil or canola oil
- Sea salt
- Freshly ground black paper

Peel the potatoes and soak in cold water (10 min). Next, dry the potatoes with a clean tea towel.

Roughly grate the peeled potatoes with a peeler, so you get thin & wide slices (the ‘wild’ effect). Wring out as much liquid as possible - it’s essential for the crisp finesse.

Add 2 beaten eggs, 1-2 finely cut garlic cloves, 1/2 cup Panko (or bread cramps), salt and paper. Mix gently.

Heat 1/2 cup oil in a nonstick pan over moderately high heat until hot (not smoking…). Now, working in batches of 4 croquettes, spoon about 2 tablespoons of mixture per croquette into the pan (it’s OK to get design wild shapes…). Fry until golden on both sides.

Drain on paper towels and keep warm in oven till all croquettes are made.

To serve with sour cream and chopped spring onion.

Another serving suggestion: top with parmesan cheese, and grill 2 min in oven. Yammi!
