Broccoli and Cauliflower with Almonds
ingredients
- 1/4 cup butter
- 1/4 cup flour
- 2 1/2 cups milk
- 1 tsp curry powder
- 1 tbsp apricot chutney or jam
- Salt and pepper to taste
- 1 cup grated Swiss cheese
- 1 pkg. Frozen broccoli, defrosted
- 1 pkg. Frozen cauliflower, defrosted
- 1/4 cup butter, melted
- 1 1/2 cups bread crumbs, toasted
- 1/2 cup sliced almonds, toasted
directions
Melt butter in a medium saucepan. Whisk in flour. Cook 2-3 minutes, stirring but not browning. Whisk in milk, bring to a boil. Stir in curry and chutney. Reduce heat. Simmer gently for 5 minutes. Add salt and pepper to taste. Stir in cheese. Cook only until melted. Place broccoli and cauliflower in a butter 3 quart casserole dish. Pour sauce over top. For topping mix melted butter with bread crumbs and almonds. Sprinkle over vegetables and sauce. Bake casserole in a preheated 350° oven for 15-20 minutes or until bubbling.
