Chopped Apple Salad with Pomegranate Vinaigrette
ingredients
- For the Vinaigrette:
- 1/4 c pomegranate molasses or juice
- 2 TB red wine vinegar
- 1 TB Dijon mustard
- 1 TB honey
- Salt & pepper
- 3/4 c extra-virgin olive oil
- For the Salad:
- 6 apples, skin left on and diced
- 2 c baby spinach
- 2 heads endive, thinly sliced
- 1 c toasted coarsely chopped walnuts
- 3/4 lb blue cheese, crumbled
- Salt & pepper

Whisk together the pomegranate molasses, vinegar, mustard, honey and salt and pepper in a medium bowl. Slowly whisk in the olive oil until emulsified.

Combine the apples, spinach, endive, walnuts and blue cheese in a large bowl. Add the vinaigrette and toss to coat, season with salt and pepper, to taste.

Use any apples (Granny Smith, Gala, Fuji or a combination) Recommended Cheeses: Maytag, Danish, Cabrales
