Malaysian Chicken Pizza
Our favorite pizza, very flavorful, healthy and unique.
ingredients
- 3/4 cup rice vinegar
- 1/4 cup packed brown sugar
- 1/4 cup low sodium soy sauce
- 3 Tbsp water
- 1 Tbsp fresh minced ginger
- 2 Tbsp chunky peanut butter
- 1/2-3/4 tsp crushed red pepper flakes
- 2-4 garlic cloves minced
- 1/2 pound chicken breast, cut into bite-sized pieces
- 1/2 cup reduced fat and sodium Swiss cheese
- 1/4 cup part skim mozzarella cheese
- Pizza Crust
- 1/4 cup chopped green onions

Preheat oven to 450 degrees. I prefer to precook the pizza crust until just crispy to ensure a crispy crust, this usually takes about 10-15 min. While the crust precooks, whisk together first 8 ingredients (through garlic). Over medium high skillet, saute chicken 2 minutes, until just cooked through. Remove from skillet and pour vinegar mix into pan. Bring mixture to a boil and cook for 6 minutes until slightly thick. Add chicken back to sauce and cook for another 1 min.

Sprinkle both cheeses over prepared crust. Top with chicken mixture. Bake 12 minutes on the bottom rack. Sprinkle with green onions and serve.
