ingredients
- 4 slices bacon, cut into 1 inch pieces
- 1 1/2 cups smoked ham or smoked sausage, cubed
- 4 potatoes, peeled, washed, and sliced into thin rounds
- salt and pepper to taste
- 1/2 t dried marjoram
- 4 green onions, chopped

1. Preheat oven to 375F

2. In large nonstick skillet, fry bacon until crisp. Remove and drain on a plate lined with paper towels. Place bacon pieces in a large oven proof casserole dish. Top with cubed ham or sausage.

3. Remove all but 1 Tablespoon of the bacon fat from the skillet. Add potatoes and return to heat. brown potatoes lightly over medium heat. The potatoes will take on the bacon flavor.

4. Place potatoes on top of ham and sprinkle well with salt and pepper. Add marjoram.

5. Add half the green parts of the onions and all the white parts. Save the remaining green parts. Pour enough water over skillet mixture to cover.

6. Cover with lid and bake for about 45 minutes, or until potatoes are tender when pierced with a fork. Remove, sprinkle with remaining green onion, and serve.
