Mary's Charo Beans
ingredients
- 1 lb dried pinto beans
- 1 pkg good bacon bits OR
- 1 cup chopped ham
- 3 cloves garlic
- 1 can stewed, chopped tomatoes
- 1 tube pork chorizo, cooked (optional)
- 1 onion, chopped
- 2-3 Seeded, chopped jalapenos
- 1 bell pepper, chopped
- 1 t salt
- 1 bunch cilantro, chopped
- 1 beer

Rinse beans and boil in a large pot of water until tender but still firm, about 1-1 1/2 hours. Add garlic, tomatoes, onion, jalapeno, bell pepper and bacon. Simmer until beans are tender but not mushy.

Stir in cilantro and beer. Simmer to cook beer down and enjoy!

Great with any Mexican dish. This is a big batch I usually cut it in half.
