Northwest Alder Planked Salmon with Smoked Tomato Butter Sauce
ingredients
Alder Planked Salmon- 4 -8 oz. salmon filets (boneless & skinless)
- salt & Pepper to taste
- seasoned alder plank
- 8 oz. smoked tomato butter sauce
- 1/4 oz. snipped chives
- 1 oz.roma tomato
- 1 oz. garlic
- 2 each smoked tomatoes (whole)
- 1 cup white wine
- 2 tablespoons lemon juice
- 3/4 cup cream
- 1 lb. butter
- 1/2 tsp. seasoning salt (20: 1 salt: white pepper)

Make tomato butter sauce;
- 2
Saute garlic in oil. Deglaze pan with wine and lemon juice. Add tomatoes and reduce to almost dry (approx. 2-Tablespoon. liquid) Add cream and reduce by half. Slowly incorporate cold butter. Season, strain. Hold in warm area until serving

Cook alder plank salmon fillets in oven at 350 degrees for 8-10 minutes or until done.

Serve 2-oz Smoked tomato butter with each salmon fillet.

Garnish sauce with snipped chives & Roma tomato brunoise.
