Zucchini Bread
3 Eggs
2 cups Sugar
¾ cup Oil
1 tsp Vanilla
2 cups raw, grated Zucchini
2 cups Flour
1 tsp Salt
¼ tsp Baking Powder
1 Tbl Cinnamon
2 tsp Baking Soda
1 cup Raisins (optional)
½ cup chopped Walnuts (optional)
Mix eggs, sugar, oil, vanilla and zucdhini. Add remaining ingredients.
Divide into two greased 5x9 inch loaf pans. Bake at 325 degrees for 45 minutes. Cool on wire rack.
