Zucchini Bread

  • 3 Eggs

  • 2 cups Sugar

  • ¾ cup Oil

  • 1 tsp Vanilla

  • 2 cups raw, grated Zucchini

  • 2 cups Flour

  • 1 tsp Salt

  • ¼ tsp Baking Powder

  • 1 Tbl Cinnamon

  • 2 tsp Baking Soda

  • 1 cup Raisins (optional)

  • ½ cup chopped Walnuts (optional)

  • Mix eggs, sugar, oil, vanilla and zucdhini. Add remaining ingredients.

  • Divide into two greased 5x9 inch loaf pans. Bake at 325 degrees for 45 minutes. Cool on wire rack.
