Margarita Pizza
A light pizza with olive oil, garlic, fresh basil, fresh tomatoes, mozzarella and Parmesan cheeses. Perfect with a beer on a hot summer night.
ingredients
- Basic pizza dough
- 7 oz mozzerella cheese (thinly sliced)
- 8 canned plum tomatoes, drained and chopped
- 1/4 cup fresh basil leaves, torn into small pieces
- Salt and freshly ground pepper
- 4 tablespoons extra-virgin olive oil

Preheat oven to 450. If using a baking stone or tiles, place in the oven now.

Shape the pizza dough into one large pizza or small individual pizzas (I usually make them into mini appetizer sizes). Cover with the mozzarella and then the tomatoes. Scatter the basil over the top. Season to taste with salt and pepper and drizzle 3 tablespoons of olive oil over the top. Transfer to the over and bake for 10 minutes. Reduce the oven temperature to 400 degrees and bake until the crust is golden brown (about 10 minutes longer, but keep checking b/c every oven is a little bit different). Drizzle the remaining 1 tablespoon of olive oil over the top and serve immediately.
