Chicken Rolls With Rösti and Salsa
This is the perfect friday dinner. I takes a little time, but it’s definitively worth it!
ingredients
- For the chicken:
- 4 large chicken breasts
- 100 g grated white cheese
- 80 g feta
- 4 Tbsp sun-dried tomatoes
- 4 Tbsp pesto
- 2 tsp dried basil
- 2 tsp dried oregano
- salt to taste
- For the Rösti:
- 400 g potatoes
- 200 g grated white cheese
- 1 chilli
- salt to taste
- For the salsa:
- 6 tomatoes
- 4 avocados
- 3 cloves garlic
- 2 medium red onion
- juice of half a lemon
- 3 tbsp extra virgin olive oil
- 2 Tbsp dried Parsley
- 3 chillies

Use a meat hammer to flatten the chicken breasts. Divide the feta, sun-dried tomatoes, pesto and herbs on the chicken. Then roll them together as tightly as possible. Use a toothpick to hold them together if necessary. Sprinkle white cheese on top and cook in oven at 200 deg C for 20 minutes.

For the salsa just add all ingredients to a food processor and mix. If you do not have food processor you can chop it up manually which will give you a chunkier texture.

While the chicken is cooking skin and grate the potatoes. Mix in the white cheese and chilli and fry in cooking pan until they just turn brown.
