Caramelized Onion and White Bean Dip
ingredients
- 1 medium yellow or sweet onion, sliced
- 1/4 cup extra virgin olive oil - divided
- 1 15 oz can cannellini or white kidney beans - drained and rinsed
- 2 tablespoons freshly squeezed lemon juice (about 1 lemon)
- 1 tablespoon chopped parsley
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon chopped fresh thyme
- salt and pepper to taste

Heat a medium sauce pan over medium heat - add oil and heat through. Add onions and reduce heat to medium-low. Cook until onions are golden brown and caramelized - about 45 min. Stir often.

Place the beans in a food processor and pulse until coarsely chopped. Add caramelized onions and puree. With the machine running - add olive oil, lemon juice, and herbs. Season with salt, pepper and additional lemon juice as needed.

Serve with vegetable chips.
