Cheddar Stuffed Bacon Wrapped Chicken
Your chicken, cheddar, bacon dream come true! Chicken breast stuffed with cheddar and then wrapped in bacon. Bon Appétit!

- 4 pieces boneless, skinless chicken breast
- 1 cup shredded cheddar cheese
- 1 pack of bacon (I use one strip per piece of chicken)
- 1 tablespoon extra-virgin olive oil toothpicks

Heat the oven to 375 degrees F.

Thinly slice chicken breast pieces. Pound lightly between parchment paper or clear plastic. Peel paper away and season the meat with your favorite seasoning. Add a small amount of cheddar, forming a thin long line going down the chicken (make it thin so it does ooze out), roll the chicken starting with the widest side, secure the at the end with a toothpick going straight through the roll. Wrap each roll with bacon and secure with a toothpick (go around the chicken diagonally, so the whole roll is covered and it cooks evenly). Heat the olive oil in skillet over medium-high heat. Brown the chicken evenly all over, 5 to 6 minutes. Transfer the chicken to a small baking sheet or glass baking dish, sprayed with PAM, place in the oven and cook for 8 minutes on each side or until bacon crispy and ready.

Don't forget to remove your toothpicks. You can adjust the amount of chicken, 1 chicken breast, should give you at least 3 thinly sliced cutlets
