Vegetable Casserole
ingredients
- 1 container Ricotta Cheese
- 1 Zucchini
- 1 Yellow Squash
- 1 Eggplant
- 1 Tomato
- 1 Onion
- 1 pkg. Blended Cheddar and Mozzarella cheese
- 1 Egg
- Salt
- Pepper
- Oregano
- Parsley

In mixing bowl add egg and ricotta cheese. Mix together.

Cut up vegetables into thin slices, you can peel vegetables but it is not necessary. Place in large mixing bowl or large baking dish.

Add ricotta cheese mixture and half the cheddar/mozzarella cheese and blend well.

Add seasoning to taste.

Place in large baking dish and sprinkle with cheddar/mozzarella cheese.

Place in oven and bake on 350° for about an hour or until cheese is melted and vegetables are soft.
