Charlemagne Salad with Hot Brie Dressing
I found this recipe while living on Mercer Island. It became one of our favorite salads.
ingredients
- 1 head curly endive
- 1 head iceberg lettuce
- 1 head romaine lettuce
- Garlic croutons
- 1/2 cup olive oil
- 4 tsp minced green onions
- 2 tsp minced garlic
- 1/2 cup sherry wine vinegar
- 2 T fresh lemon juice
- 4 tsp Dijon mustard
- 10 oz. ripe brie cheese cut in pieces and at room temperature
- Freshly ground pepper to taste

Tear lettuce into pieces and toss with garlic croutons in a large bowl. Set aside.

Warm olive oil over low heat for about 1 minute. Add green onions and garlic and cook until translucent. Blend in vinegar, lemon juice and mustard. Add cheese and stir until melted and blended. Season with pepper. Toss with salad and serve immediately.
