Guacamole Salad

If you like guacamole, you’ll love this - a chunky version that’s delicious on salad or on it’s own with some great bread. Make sure the avocados are just ripe - they should be buttery and mellow. Serve it after an hour in the fridge to let the flavors combine or right away if you want.

ingredients

  • 2 medium or one large avocado
  • 1 medium tomato
  • Fresh lime juice
  • 2 cloves of garlic, minced
  • kosher salt
  • Cilantro, if desired

directions

    Cut and pit the avocados, cutting the meat from the skin in sturdy chunks. Dice the tomato, discarding the seeds.

    Combine the avocados and tomato, then add the garlic, diced finely. Squeeze lime juice over all, sprinkle with salt and cilantro to taste and stir carefully - don’t mush the avocado chunks.

    Serve on fresh greens or spread on bread with hummus.
