Chicken Dumpling Soup
Sage Chicken dumpling soup
ingredients
- 1 c chopped roasted sweet red peppers
- 1 c chopped celery
- 1 c chopped carrots
- 1 T olive oil
- 1/4 C flour
- 6 C chicken stock
- 1 deli chicken, skinned, deboned,cut up
- 2 C frozen peas (or canned)
- 1/2 C kalamata oivers chopped
- 1 T lemon juice
- 1 t ground sage (or 1 T fresh)
- 2 C all purpose flour
- 1/2 t baking powder;
- 1/4 t baking soda
- dash salt
- 1 T snipped or dried parsley
- 1 c sour milk or buttermilk
- 2 T olive oil

Saute vegetables with oil til tender; add flour to make a roux; brown slightly; add broth slowly; cook until thickended and bubbly; Add chicken, peas, olives, lemon juice, and sage. Return to boil.

Make Dumplings: Combine dry ingredients; add buttermilk and oil. Mix until moistened;

Drop 1/3 c at a time into boiling soup; keep simmering covered 10 min. or until toothpick comes out clean of the dumplings.
