Sage Chicken dumpling soup

ingredients

  • 1 c chopped roasted sweet red peppers
  • 1 c chopped celery
  • 1 c chopped carrots
  • 1 T olive oil
  • 1/4 C flour
  • 6 C chicken stock
  • 1 deli chicken, skinned, deboned,cut up
  • 2 C frozen peas (or canned)
  • 1/2 C kalamata oivers chopped
  • 1 T lemon juice
  • 1 t ground sage (or 1 T fresh)
  • 2 C all purpose flour
  • 1/2 t baking powder;
  • 1/4 t baking soda
  • dash salt
  • 1 T snipped or dried parsley
  • 1 c sour milk or buttermilk
  • 2 T olive oil

    Saute vegetables with oil til tender; add flour to make a roux; brown slightly; add broth slowly; cook until thickended and bubbly; Add chicken, peas, olives, lemon juice, and sage. Return to boil.

    Make Dumplings: Combine dry ingredients; add buttermilk and oil. Mix until moistened;

    Drop 1/3 c at a time into boiling soup; keep simmering covered 10 min. or until toothpick comes out clean of the dumplings.
