Tomato Carolines

  • 2 dozen Cherry Tomatoes
  • 1 can (4 1/2 oz. size) Tuna
  • 1 tsp Tarragon
  • 1 tsp Chervil
  • 1 Tbls Minced Parsley
  • 1 tsp Basil
  • 1 tsp Lemon Juice
  • 2 Tbls Mayonnaise
  • 2 hard-cooked Eggs
  • Salt

    Carefully slice off top of tomatoes and gently squeeze out juices and seeds. Sprinkle lightly with salt and refrigerate.

    Drain tuna and place in blender or food processor. Add herbs, lemon juice and mayonnaise. Puree. Transfer to small bowl.

    Peel cooled, hard-cooked eggs and mince. Fold into tuna puree. Stuff mixture into tomatoes, forming dome on top of tomatoes.
