Ingredients

  • 1 cut-up large frying chicken
  • 1 box Uncle Ben’s Wild Rice blend
  • 1/2 c. milk
  • 3/4-1 c. red wine
  • 1 can mushroom soup
  • 1 can undrained sliced mushrooms
  • Salt
  • Pepper

    Use a Dutch Oven pan or similar pan with a lid that can be put in the oven.

    Put rice mixture in the pot and add the rest of the ingredients except the chicken. Stir to mix well. Salt and pepper the chicken very lightly. Place the pieces on top of the mixture - put larger pieces of chicken in the middle. Cover and bake in a 350 degree oven for about 1 1/2 hours. Remove the lid so the chicken can brown, for the last 15 minutes.

    One chicken and ingredients as stated will serve 4-5 people, but it will be light on the rice. If you have big rice eaters, you may want to use two boxes of rice mix and double the remaining ingredients to have larger servings of rice.
