Impromtu Stirfried Noodles
A friday night dinner that turned into a big hit with leftover produce in the fridge.
ingredients
- 2 tablespoons peanut oil
- 1 Leek
- 2 cloves of garlic
- 1 tablespoon fresh ginger, diced
- 1 medium onion
- 1/2 bunch of kale, cleaned, leaves removed from stems
- 2 cups cooked whole wheat spaghetti
- Peanut Sauce
- 1.5 tablespoon creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- zest and juice of 1 lime

Whisk together ingredients for the sauce. Set aside.

Heat oil in a wok over high heat. Add onions, leek, garlic and ginger. Saute until soft. Add noodles and saute until hot and tossed with onion mixture. Add chopped kale, saute till wilted.

Serve with chopped peanuts, cilantro and a wedge of lime.
