Quick and Easy Shrimp Primavera
ingredients
- 8 oz. rotini pasta, uncooked
- 1/2 cup Zesty Italian dressing
- 1 lb. medium shrimp, cleaned
- 1 large red pepper, chopped
- 1 cup packaged matchstick carrots
- cup fresh sugar snap peas
- 2 cloves garlic, minced
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. grated lemon peel

Cook pasta as directed.

Meanwhile, heat dressing in large nonstick skillet over medium heat. Add shrimp, veggies, and garlic; cook and stir 3 to 4 minutes, or until shrimp are pink and veggies are crisp-tender.

Drain pasta; toss with shrimp mixture. Sprinkle with cheese and lemon peel.
notes
Can substitute chicken breast for shrimp.
