ingredients

  • 1 1/2 lb. ground beef
  • 1 onion, chopped
  • 1/2 tsp oregano
  • 1 cup minute rice
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 2 cups cottage cheese
  • 1 can mushroom or celery soup or chicken soup, undiluted
  • 1 cup grated cheese
  • 2 cups zucchini, sliced

directions

Brown onion and beef, drain. Stir in oregano, rice, pepper, and salt. Grease 8x10 inch baking dish. Layer sliced zucchini in bottom, beef mixture, then cottage cheese soup, with cheese on top. Bake at 325 degrees for 90 minutes, or until zucchini is tender and cheese is browned.
