Spinach Lasagna Roll-Ups with Tomato Coulis
ingredients
- 9 uncooked dry lasagna noodles
- Tomato Coulis:
- 1 tbsp olive oil
- 1 cup chopped red onion
- 1 tbsp minced garlic
- 3 cans diced tomatoes
- 1/4 cup fresh basil, sliced
- salt and pepper
- Filling:
- 1 tbsp olive oil
- 2 tbsp minced shallots
- 3 pkgs frozen spinach, thawed and squeezed dry
- salt/pepper
- 1/4 tsp nutmeg
- 9 tbsp crumbled feta

1. Preheat oven to 350° and coat baking dish with cooking spray. Cook lasagna noodles for about 6 min, rinse with cold water and drain. Spray noodles with cooking spray to prevent sticking

2. Heat oil in saucepan over medium heat, add onion and garlic, cook 4 min stirring occasionally, add tomatoes, cook 30 min over low heat. Remove from heat, add basil, salt/pepper. Place mixture in blender (in batches) and puree until smooth, place in baking dish and set aside

3. Heat oil in skillet over medium-high heat and add shallots, cook 3 min. Stir in spinach, salt/pepper, and nutmeg, cook and stir 3 min, remove from heat

4. Place plastic wrap on work surface, lay out lasagna noodles, top each with equal amounts of spinach mixture leaving last 2" uncovered. Sprinkle feta on top, roll up noodles starting with the covered end. Carefully cut each roll-up in half and place in dish ruffled edge facing up

5. Cover with aluminum foil, bake 30-35 min
