Reuben Casserole
Like a reuben sandwich as a casserole, this is a must make. I got this recipe from my friend Jay Bach and it’s a fantastic dish.
ingredients
- 1 cup sour cream
- 1/2 cup 1000 Island Dressing
- 1 cup chopped onions
- 8 slices of rye bread, cubed
- 1 (32 oz.) jar sauerkraut
- 3 packages Buddig Corned Beeef, chopped
- 12 oz. shredded monterey jack cheese
- 8 oz. shredded swiss cheese
- 1/2 cup margarine or butter, melted

Preheat oven to 350 degrees. Combine sour cream, onions, and 1000 Island Dressing. Put 1/2 of the cubed rye in 9x13 baking dish. Layer sauerkraut, sour cream mixture, corned beef and cheese. Top with remaining 1/2 of cubed bread and drizzle with melted margarine. Bake for approximately 45 minutes at 350 degrees.

If you don’t like sauerkraut, you can back off on the amount. Still a great dish.
