Salad of New Potatoes/Spinach and Warm Walnut Bacon Vinaigrette
This is a recipe that Larry makes for me on special occasions.
ingredients
- 1 1/4 lbs. new red potatotes (approx. 10) scrubbed
- 1 teaspoon salt
- 1/2 lb. bacon, chopped
- 2 cups yellow onions, chopped
- 1/4 tsp. black pepper
- 1 cup walnut pieces
- 2 teaspoons garlic, chopped
- 1/4 cup balsamic vinegar
- 1/2 cup walnut oil
- 10 ounces fresh spinach, washed and trimmed
- 1/4 lb. bleu cheese, crumbled

Cook the potatoes in salted water until they are fork tender, about 10-15 minutes. Drain and quarter the potatoes and set aside.

Cook the bacon in a large saute pan over medium high heat until slightly crisp, about 10 minutes. Add the onions, 1 teaspoon of salt and the pepper and cook, stirring until the onions are wilted. Add the walnuts and cook another 5 minutes, stirring often. Remove from heat and add the garlic, stir for about 30 seconds. Add the vinegar and oil and mix well. Toss the potatoes with 1/2 of the dressing and set aside.

On each plate put some of the spinach, top with potatoes and remaining dressing. Top with bleu cheese crumbles. Eat warm.
