Anna's Chicken Tortilla Soup
Wonderful soup to serve on that cold winters night. Excellent to make for large groups.
ingredients
- 4 cups Chicken broth
- 4 cup water
- 1 can cream of chicken soup
- 1 can Rotel tomatoes
- 1 cup skim milk
- 12 oz. Velveeta cheese
- 1/4 cup sautéed onions
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 bag frozen mixed vegetables (or fresh)
- 3 flour or corn tortillas torn in small pieces
directions
Boil chicken in water or chicken broth cut into bite size pieces and return to broth. Add remaining ingredients except tortillas. Cook until vegetables are tender. Then add tortillas. Cook until tortillas are soft.

This is great with black beans too!!
