RED PEPPER CROSTINI
Great for a snack, appetizer or table food.
ingredients
- Peppers:
- 10 red, orange and/or yellow bell peppers
- 2 cups olive oil
- 3 garlic cloves, halved
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- Crostini:
- 8 slices (1/2 in. thick) of baguette bread
- 1 tablespoon olive oil
- 1/3 cup roasted red bell pepper, chopped
- 1/3 cup smoked mozzarella or fontina cheese

Preheat broiler. Cover a heavy baking sheet with foil. Arrange the bell peppers on the baking sheet and broil until the skins brown and blister, turning the peppers over occasionally, about 15-20 minutes total. Enclose the peppers in a resealable plastic bag (or in a bowl covered in plastic wrap) and set aside until cooled to room temp.

Peel and seed the peppers and chop. In a large bowl, toss the peppers with the oil, garlic, salt, and pepper. Cover and refrigerate for at least 5 hours, for the flavors to blend. Bring to room temp before serving.

Crostini:

Preheat oven to 375 degrees. Arrange bread slices on a baking sheet and brush both sides w/ olive oil. Bake until pale golden and crisp, about 10-15 minutes.

Preheat the broiler. Arrange the bell peppers atop the crostini and sprinkle with cheese. Broil until the cheese melts, about 2 minutes. Serve immediately.
