MARINATED GLAZED CHICKEN
Anna this is a tried, true and tested almost no fail recipe. Great for holiday and company because it can all be done ahead of time.
ingredients
- 1 Bottle (8 ounces) Russian dressing
- 1 Package (2 ounces) dry onion soup mix
- 1 jar (10 ounces) apricot preserves
- 2 frying chickens (2 to 2 1/2 pounds) quartered
- (can be larger amount of chicken - mixture covers a good amount)

In a small bowl, thoroughly blend the Russian dressing, onion soup mix, and the preserves.

Arrange the chicken in a single layer in a shallow baking pan, skin side up. Pour the dressing over the chicken and marinate overnight. Bake uncovered in a 350 - degree F. oven for 1 1/2 hours, basting every half hour. May be frozen and reheated.
