Salad: Chinese Chicken Salad
ingredients
- 3 boneless chicken breast
- Marinade and Salad Dressing:
- 2 T sugar
- 2 T sesame oil
- 1/4 cup sherry
- 1/2 cup rice vinegar
- 2 t. salt
- Grind or two of pepper
- 1/4 cup oyster sauce
- 1/4 cup soy sauce
- 1/4 cup canola oil
- Salad:
- 2 cups leaf lettuce
- 2 cups Chinese cabbage
- Small bit of romaine
- 1/2 cup scallions
- 1/2 cup parsley (not minced)
- 2/3 celery
- Chopped peanuts
- 1/2 stick of bean threads

Poach chicken in chicken broth for about 20 minutes (no longer pink inside), Cool and spread with a fork.

Mix marinade/sauce together. Add some to the chicken and let marinade for awhile in the refrigerator.

Heat about a cup of oil in a wok. The oil is hot enough when a bean thread instantly puffs up. Prepare the bean threads in batches and drain on paper towels.

Add chicken to greens. Add salad dressing, most of bean threads and chopped peanuts and mix.

Put on platter and put remaining bean threads and peanuts sprinkled over top.
