Irish Latkes
Each Christmas Eve, the O’Connell family upholds the family tradition of Latkes the night before Santa comes.
ingredients
- 6 to 8 large potatoes, peeled
- 2 medium onions
- 2 eggs
- 1/4 c. flour
- Salt
- Pepper
- Canola Oil
- Sour Cream
- Apple Sauce

1. Grate the potatoes…either on a grater or in a cuisinart with the grating attachment.

2. Let the grated potato sit in a colander in the sink so that the liquid can drip out of the potato.

3. After it has dripped to being nearly dry, squeeze out the remaining water.

4. Mix the potato with the onion, the flour, eggs, salt and pepper. If it is a bit too wet, you can add a bit more flour.

5. Put 1/4 inch of oil in a wide frying pan and let it heat up.

6. Make the pancakes….whatever size you like.

7. When the oil is hot, add the pancakes and cook until they are golden brown.

8. Turn over and do the same.

They can be stacked on heavy paper towel until you cook them all.

1. To serve, place 2 or 3 on a plate…microwave 30 seconds til hot.

2. Add sour cream and apple sauce as garnish.
