Roasted Green Beans in Dill Vinaigrette
Simple to make and equally good served warm or room temperature.
ingredients
- 2 LBS. green beans, trimmed
- 3 TBS olive oil
- 3/4 tsp salt
- 2 TBS white wine vinegar
- 1 1/2 tsp Dijon mustard
- 1/2 tsp sugar
- 1/2 tsp freshly ground black pepper
- 2 TBS fresh dill or 1 tsp dried

1. Preheat oven to 450° In large roasting pan, toss green beans with 1 TBS olive oil and 1/2 tsp salt. Roast beans 20-30 minutes until tender and slightly browned, stirring twice.

2. Meanwhile, prepare vinaigrette: In a small bowl, with wire whisk, combine vinegar, mustard, sugar, pepper, and 1/4 tsp salt. While whisking, slowly add 2 TBS olive oil; stir in dill.

3. When beans are done, in large bowl, toss beans with vinaigrette.
