Szechuan Peanut Nachos
I use chopped peanuts for garnish
ingredients
- 4 tablespoons Extra Virgin Olive Oil
- 1/2 cup scallions, thinly sliced
- 2 tablespoons white vinegar
- 2 tablespoons sugar
- 4 tablespoons dark soy sauce*
- 1 1/4 cups extra chunky peanut butter
- 2 tablespoons chili paste*
- 2 cups chicken (I use vegetable broth)stock
- 2 tablespoons toasted sesame seeds*
- 1 platter tortilla chips

In a medium saucepan, heat the Extra Virgin Olive Oil and sauté the scallions until translucent. Add the vinegar, sugar, and soy sauce. Blend thoroughly.

Add the peanut butter and chili paste to the saucepan, blend, and add the chicken (vegetable) stock. Mix well. Reduce slightly over high heat for about 5 minutes. Pour over chips, sprinkle on sesame seeds (or chopped peanuts), and serve.
