Baked Caramel Corn
Easy to make, will disappear quickly.
ingredients
- 1 C butter
- 2 C packed brown sugar
- 1/2 C corn syrup--light or dark
- 1 TSP salt
- 1/2 TSP baking soda
- 1 TSP vanilla
- 6 quarts popcorn, popped
directions
Heat oven to 250 degrees. In saucepan, melt butter; stir in sugar, corn syrup and salt. Bring to boil, stirring constantly. Boil, without stirring, for 5 minutes. Remove from heat; stir in soda and vanilla. Place popped corn in large container. Gradually pour hot mixture over popcorn, mixing well. Turn onto 2 large, shallow baking pans. Bake 1 hour, stirring every 15 minutes. Remove from oven. Cool completely. Break apart and store in airtight containers.
notes
Add Spanish peanuts and this is a fair imitation of Cracker Jacks.
