Thai Shrimp and Pasta
ingredients
- 1 pound of medium size shrimp
- 8 oz light Italian dressing
- 2 tbsp. peanut butter
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp ginger- grated (optimal)
- 1/2 tsp crushed red pepper
- 8 oz angel hair pasta
- 2 tbsp salad oil
- 1 tbsp sesame oil
- 1 carrot shredded
- 1 cup green onion chopped
- 2 tbsp cilantro, chopped
directions
Mix shrimp and 1/3 cup of salad dressing. Refrigerate for 1 hour. In small bowl, whisk peanut butter, soy sauce, honey, ginger, red pepper, and remaining salad dressing-set aside. Prepare pasta- while pasta is cooking, in a sauce pan heat oils (2), add carrots and cook 1 minute. Drain shrimp and put shrimp, green onions, in pan with carrots and cook until shrimp is done (approx 3 minutes). Drain pasta, add shrimp, and sauce and cilantro, toss together, mixing well.
