ingredients

  • 2T peanut butter
  • 2T chicken stock
  • 2T chopped fresh coriander
  • 1T rice vinegar
  • 1T honey
  • 2t sesame oil
  • 2t soya sauce
  • 1t minced garlic
  • 1lb sinless, boneless chicken breasts
  • 1t minced gingerroot
  • 1t sesame seeds toasted

directions

  • 1

    In food processor combine all ingredients except the chicken. Set 3T aside.

  • 2

    Cut chicken into cubes and place on skewers and brush with sauce. Place on baking sheet and bake 7 min. 425 degrees

  • 3

    Serve with the remaining sauce.

  • 4

    Sauce can be prepared 2 days in advance.
