chicken satay
ingredients
- 2T peanut butter
- 2T chicken stock
- 2T chopped fresh coriander
- 1T rice vinegar
- 1T honey
- 2t sesame oil
- 2t soya sauce
- 1t minced garlic
- 1lb sinless, boneless chicken breasts
- 1t minced gingerroot
- 1t sesame seeds toasted

In food processor combine all ingredients except the chicken. Set 3T aside.

Cut chicken into cubes and place on skewers and brush with sauce. Place on baking sheet and bake 7 min. 425 degrees

Serve with the remaining sauce.

Sauce can be prepared 2 days in advance.
