AUNT BOBBIE'S PUMPKIN PIE
LIGHT CREAMY THANKSGIVING TRADITION
ingredients
- 1 envelope Knox gelatin
- 1/2 t. salt
- 3/4 c. brown sugar
- 1 t. cinnamon
- 1/2 t, nutmeg
- 1/2 c. milk
- 1/2 c. water
- 3 eggs separated
- 1 1/2 c. pumpkin
- 1/4 c. sugar (for egg whites)
- 1 9" baked pie shell
directions
Mix together gelatin, sugar, salt and spices thoroughly in a saucepan. Stir in milk, water, egg yolks, and pumpkin. Mix well. Cook over medium heat. Stir until gelatin is dissolved and mixture is heated through. Remove from heat and chill until mixture mounds slightly when dropped from a spoon. Refrigerate 2 hours. Beat egg whites until stiff. Beat in sugar. When beating egg whites, make sure they are at room temperature (about 1/2 hour from ’fridge) Fold egg whites into pumpkin mixture. Pour into pie shell and chill (about 4 hours) Cover with whipped cream or cool whip.
