Soup - Vibrant Broccoli

ingredients

  • 1 large bunch of broccoli (pre-cut approximately 6 cups)
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1/4 cup long grain rice
  • pinch of hot pepper flakes
  • 3 cups vegetable or chicken broth
  • 3 cups milk
  • 2 tbsp freshly squeezed lemon juice
  • salt
  • pepper

    Cut broccoli stalks and put in pot along with garlic, onion, rice, hot pepper flakes and broth. Bring to a boil over high heat. Reduce heat, cover and boil gently for 10 minutes, until rice is almost tender. Pour into blender and puree until smooth. Return to pot, stir in milk, heat over medium - low heat, stirring often, just until steaming, do not boil. Stir in lemon juice, salt and pepper.

    Top each serving with 1 tbsp grated aged cheddar or aged Gouda if you’re dutch.

    Optional: You can add 2 cups of chopped swiss chard or spinach with the broccoli.
